Chocolate chip cookies

Crispy edges, chewy middles

1 cup of butter, softened
1 cup white sugar
1 cup packed brown sugar
2 eggs
2 tsp vanilla extract
3 cups all purpose flour
1 tsp baking soda
2 tsp hot water
1/2 tsp salt
2 cups semisweet chocolate chips

Preheat oven to 350 degrees F
Cream together butter, white sugar and brown sugar until smooth.
Beat in the eggs 1 at a time, then stir in vanilla. Dissolve baking soda in hot water and add it to the batter along with the salt.Stir in flour and chocolate chips.
Drop in large spoonfuls onto ungreased sheets.

Bake for around 10 minutes or until edges are browned.

Great cookies! kids love them.

Oatmeal chocolate chip muffins

1 1/4 cup quick oats
1 1/4 cup milk
1 egg
1/2 cup veggie oil
3/4 cup packed brown sugar
3/4 cup semisweet chocolate chips
1 1/4 cups flour
4 tsp baking powder
1 tsp salt

Combine oats and milk and allow to stand for 15 minutes. Preheat oven to 100 degrees F. Line the muffin pan with muffin liners.

Stir egg, oil 1/2 cup brown sugar, chocolate chips into the oats and milk mixture.
Combine flour, baking powder and salt. Add oat mixture to flour mixture, stirring just until moist. Fill each cup of muffin tin 2/3 full. Sprinkle tops with remaining brown sugar.
Bake at 400 degrees F for 20 to 25 minutes.

Great for a quick breakfast!


Cinnamon Swirl Bread

1 large room temp egg
1/4 cup milk
Approx. 3/4 cup water
1/4 cup softened butter
1/3 cup white sugar
1 tsp salt
3 1/2 cup flour
2 tsp active dry yeast
optional : 1/2 cup raisins

Filling

1/3 cup melted butter cooled
1/3 cup brown sugar
3 tsp. cinnamon
1 egg white
1/2 tsp sugar ( for topping)

Put the egg and milk in a measuring cup, and add enough warm water to make 1 cup.
Pour this mixture into the bread machine pan. Add the softened butter, 1/3 cup of sugar, salt, flour and yeast. Set the bread machine to the dough cycle.

Once done, remove the dough from the machine  and dump it out onto a lightly floured surface.
Roll it out to a 10 x 12 rectangle. Brush the surface of the dough with egg whites. Next brush with melted butter. Combine the sugar the cinnamon and sprinkle over dough, leaving 1" edge
all around.

Roll the dough from the short side and pinch the ends together where they meet.
roll the ends under and place the dough in a 12" loaf pan. Cover with a damp cloth and let it rise in a warm place for 1 hour.

Once the dough has risen, brush the top with egg whites and sprinkle with 1 1/2 tsp sugar.

Bake at 350 for 35 min.

My boys love this stuff, its great for breakfast and snacks.

Peanut butter cookies

1/2 cup shortening
1/2 cup peanut butter
1/2 cup white sugar
1/2 cup brown sugar
1/2 tsp vanilla
1 egg
1 1/2 flour
1 tsp baking soda
1/4 tsp salt

Preheat oven to 350 degrees, grease cookie sheets.
in a medium bowl, cream together the shortening, sugar and peanut butter. Beat in egg
 and vanilla. Combine the flour, baking soda and salt, stir into the creamed mixture until well blended. Roll the dough into walnut sized balls. Place the cookie 2" apart onto cookie sheets.
Press balls down using a fork dipped in sugar water.
Bake for 8  to 10 mins. Allow cookies to cool on baking sheet for 5 mins before removing to a wire rack to cool completely.

If it makes it through the dough stage in this house its a miracle. lol The boys love cookie dough.

French crusty bread

5 cups all purpose flour
2 1/2 tsp active dry yeast
1 1/2 tsp salt
2 cups warm water
1 egg white
1 tbsp water

In a large bowl, combine 2 cups flour, yeast and salt. Stir in 2 cups water and mix till well blended, using a wooden spoon mix in as much of the remaining floor as you can.

On a lightly floured surface, knead in enough flour to make a stiff dough that is smooth and elastic. Knead for about 8 to 10 min total. Shape into a ball. Place dough in a greased bowl, and turn once. Cover with a damp towel and let rise in a warm place until double in size.

Punch dough down and divide in half. Turn out onto a lightly floured surface. cover and let rest for 10 min. Roll each half into large rectangle  and roll up starting from the long side moisten edges to seal. Taper ends.

Grease a large baking sheet, place loaves seam side down.Lightly beat egg white with one tbsp water and brush on. Cover and let rise until doubled again, about 30 min.

With a very sharp knife, make 3 or 4 diagonal cut about 1/4 in deep across the top of each loaf. bake in a oven preheated at 375 degrees for 20 min. Brush again with egg whites. Bake for an additional 15 to 20 min.

Let bread cool before cutting it. the bread continues to bake after it has been taking out of the oven.
